Got a rooted cutting of this lime and it grew fast and actually bloomed and set fruit the first summer after I got the cutting. The fruit was produced in tight clumps of three or four each right at the tips of the branches. Very odd habit.
What a great flavor the leaves of the Kaffir Lime give to curries and soups! The juice is very sour and only a scant few drops are needed to flavor beverages and soups so care must be taken to not overdo the juice. The zest is fragrant and is wonderful to use for scenting a dish.
Personally I find that the leaves (crushed) are far easier to use in Thai curries instead of lemon grass, and I don’t miss the latter. And like bay leaves the lime leaves are easy to remove before serving.
My tree is thriving in a three gallon pot and doesn’t seem to need any special attention except protection from cold weather. Pruning the ends of the branches instead of pulling off the leaves encourages branching and produces more leaves so you will always have plenty of them available!
